Yum: Beef and Broccoli

As much as I try to eat a variety of things, I do tend to stick to the main food groups: pizza, pretzel sticks and tacos. Kidding. Slightly. This New Year’s Eve, we had a delicious dinner at Benihana’s. I couldn’t get enough of the fried rice and steak sauce. Thankfully, Pinterest enables my food addiction and provided me with a dozen copycat recipes. However, I also found a handful of easy, different recipes to try out that would take me out of my comfort zone.

Today’s recipe of the day is from RainyDayGal. I wanted to break from our usual and thought flank steak would be a different type of meat to try. It only took a few minutes to find in the foreign section known as red meat. Here is the recipe for broccoli and beef-

Marinade:

1/2 tsp baking soda
1 tsp sugar
1 tbsp cornstarch
1 tbsp low-sodium soy sauce
1 tbsp water
2 tbsp vegetable oil

Remaining Ingredients:

1/2 c low-sodium soy sauce (Do NOT use regular. The final product will be way too salty)
2 tbsp brown sugar
4 cloves garlic, minced
2 tbsp flour
1 tbsp sherry
3 tbsp vegetable oil
2 heads broccoli, crowns only
1 1/2 lbs flank steak, sliced into thin strips

First, prepare the flank steak for marinading. Cut against the grain, into strips.

Prepare the marinade. Start with the dry ingredients.Add the remaining wet ingredients and whisk together until blended.

Pour the liquid over the steak and marinate for one hour.

Once the meat is done marinating. Prepare the two heads of broccoli.

In a separate bowl, prepare the sauce.

In a large pan or wok, heat two tablespoons of oil until simmering. Place the broccoli in. Stir immediately, which we learned the hard way and scalded the bottom of the broccoli. Continue stirring often for 3-4 minutes. Remove and place on a separate bowl. In the same pan, heat the meat and half of the sauce mixture for 4 minutes or until meat is no longer pink. Then, add the broccoli and remaining sauce for another minute.

Every comment raved. Don’t get me wrong, it was delicious, but probably too heavy for us. We try to keep our dinners relatively light, especially sauces. Next time, we’d probably cut back on oil, flour, and soy sauce. I’d also steam the broccoli, as opposed to drenching it in oil.
