Yum: Sauteed Kale

On my quest to learning how to cook, I bought a rather colossal amount of kale.
Said kale came home and sat on my counter as I investigated the situation.
…Now what do I do with you?

So I did what any other clueless millennial does…
I enlisted the help of Google and Pinterest.
Say hello to the birth of my new go-to meal-

Sauteed Kale with Quinoa
Serves 1

Ingredients
Handful of fresh kale
2 Tablespoons of olive oil
1/4 Cup minced onions
2 Cloves of minced garlic
Salt and pepper to taste
1 Cup Quinoa
Cook kale in a boiling pot of lightly salted water, stirring occasionally for ten minutes.
Drain in a colander and set aside.

Meanwhile, heat olive oil in a skillet over moderately high heat. Saute the onion for around 6 to 8 minutes until softened. Add garlic and a pinch of salt and pepper. After a minute, reduce heat to moderate and add kale. Stir until heated through. I’ll also usually add additional vegetables and prepared quinoa at this time as well. I add a pinch of Parmesan when serving (optional).
Now that I have gotten more acquainted, I figured I’d share some tips for this super food-
When choosing kale, select firm, dark colored leaves. Avoid brown or yellow leaves.
Store in the coldest part of your fridge for 3-5 days. Do not wash kale prior to storing.
